Thanks Megan for this cute idea. I made these for my dad on Father’s Day for breakfast. My dad loved them and they looked so colorful on the table.
What you need:
- 1 red pepper
(I guess you could use yellow or green. It might be fun to have red green and yellow flowers but that would make a lot.
- 5 eggs scrambled
- 1-2 Tbs. Crumbled bacon or ham
Cut the top of of pepper. Use a spoon to remove seeds . Wash out the inside. Slice in rings being carefully to make even slices so they will lay flat on the grill. Add bacon to scrambled eggs. Grease griddle with heat on med high. Lay pepper rings on griddle once it is hot. Slowly pour about a tablespoon of egg mixture into each ring. I filled my rings all they way to the top and lots of egg ran out. If you cook a bottom layer first it seals the edges and then you can fill them to the top without it all leaking. Cook for two minutes until the egg looks firm and mostly cooked and then flip. Cook 1 more minute. We thought that steaming the pepper rings in a pan with hot water for 2-3 minutes before grilling with the eggs would make them softer for kids to eat.
